INGREDIENTS

  1. Wash and shake the herbs, then chop finely.
  2. Halve the tomatoes and finely chop the garlic clove.
  3. Finely grate the cheese.
  4. Place the eggs in a bowl and beat vigorously with a whisk or fork.
  5. Season with salt and pepper, then add the garlic, parmesan, persillade and herbs to the egg mixture.
  6. Melt the clarified butter in a frying pan over a medium heat. Pour in the omelette mixture and swirl the pan briefly to distribute the mixture evenly.
  7. Place the tomatoes on top and leave the omelette to cook, covered, for around 2 to 3 minutes over a medium heat.
  8. Mix the fromage frais with salt, pepper and a little chilli until creamy, then pour over one half of the omelette. Place the salmon on top of the fromage frais and fold the other half of the omelette over it.
  9. Leave the omelette to cook for 2 to 3 minutes on a low heat, then serve immediately.
  10. For a spicy touch, sprinkle your omelette with cracked chilli pepper!
