Chocolate fondant

INGREDIENTS

  • 4 eggs
  • 125 g dark dessert chocolate
  • 85 g caster cane sugar
  • 65 g margarine
  • 25 g flour
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon Marcel Senchou ground black pepper
  1. Preheat the oven to 200°C (gas mark 6-7).
  2. Butter 4 individual moulds.
  3. Separate the egg whites from the yolks and beat until stiff.
  4. Melt the chocolate with the margarine and cardamom, adding the sugar at the end of the cooking time.
  5. Once the chocolate has melted, remove from the heat and add the egg yolks, pepper and flour.
  6. Whisk the mixture until smooth. Gently fold in the egg whites with a wooden spoon.
  7. Pour the mixture into the moulds and bake for a maximum of 8 minutes (watch carefully to avoid overcooking, which would ‘kill’ the fondant…). Turn out and serve hot.
