Raspberry waffles

INGREDIENTS

  • 250 ml frozen raspberries and strawberries
  • Marcel Senchou ginger
  • 250 ml flour
  • 15 ml sugar
  • pinch of salt
  • 3 tbsp. vegetable oil
  • ½ cup pomegranate juice
  • ½ cup milk
  • 1 egg
  1. Place the raspberries in a small microwave-safe bowl and defrost in the microwave for 1 minute (or until the raspberries are thawed). Puree with a fork.
  2. Place the flour, sugar, baking powder and salt in a large bowl. Mix well.
  3. In the same bowl, add the remaining ingredients (oil, pomegranate juice, milk, egg and pistachios). Add the raspberry purée. Mix all the ingredients together until smooth.
  4. Leave the dough to rest for 5 minutes.
  5. Meanwhile, preheat the waffle iron.
  6. Pour 125 ml (½ cup) of mixture into the centre of the waffle iron and cook the waffle until lightly browned. Repeat this step until no more mixture remains (you should have 4 waffles).
  7. Serve immediately.
