INGREDIENTS

  • Yellowfin tuna loin
  • Guérande salt
  • Marcel Senchou sesame seeds (white and black)
  • 60ml canola oil
  • Arrange flowers to garnish
  1. Take the tuna loin out of the fridge 15 minutes before cooking to temper it.
  2. Cut it into 3 pieces and salt each side.
  3. Place the sesame seeds on a plate and roll each piece of fish in them.
  4. Pour the oil into a large non-stick frying pan and heat over medium-high heat.
  5. When the pan is hot enough, sear the fish on all sides until golden brown, about 30 seconds per side.
  6. Place the fish on a plate and leave to rest for 5 minutes before serving.
