Top tip: only use whole coriander in cold dishes as the leaves of this herb are not very heat resistant. To enjoy its full flavour, use it in salad dressings. Coriander is also an essential ingredient in tabbouleh. Combine it with mint, parsley, finely chopped vegetables and a handful of sultanas.
