Apple Pie Muffin

INGREDIENTS

Serves 6 :

Crumble :

70g brown sugar
1 tablespoon sugar
80g flour
1 teaspoon ground cinnamon
pinch of salt
55g cold butter

Apple tart filling :

240g apple pieces
30g butter
50g brown sugar
1/2 teaspoon cornflour
2 teaspoons ground cinnamon
1/2 teaspoon nutmeg

Apple muffins :

250g flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
110g butter at room temperature
100g brown sugar
70g sugar
2 eggs

Prepare the crumble:

  1. Mix the brown sugar, sugar, flour, cinnamon and salt in a bowl.
  2. Add the cold butter, cut into small pieces.
  3. Sand with your fingertips until you obtain a sandy texture.
  4. Set aside in the fridge.

 

Prepare the apple filling:

  1. Melt the butter in a frying pan over a medium heat.
  2. Add the apple pieces, brown sugar, cinnamon and nutmeg.
  3. Cook, stirring, for about 5 minutes, until the apples are tender.
  4. Add the cornflour and mix well to thicken the mixture slightly.
  5. Remove from the heat and leave to cool.

 

Prepare the muffin batter:

  1. Preheat the oven to 180°C
  2. In a bowl, mix the flour, baking powder, cinnamon and salt.
  3. In another bowl, beat the butter with the brown sugar and sugar until creamy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Gradually add the dry ingredients to the wet mixture until you have a smooth batter.

 

Assemble and bake the muffins:

  1. Fill each tin 2/3 full with the muffin batter.
  2. Add a spoonful of apple filling to the centre of each muffin.
  3. Sprinkle the crumble generously over the top.
  4. Place in the oven for around 20-25 minutes, until a toothpick inserted comes out clean.
