INGREDIENTS

  • Marcel Senchou organic sweet paprika
  • Eggs
  • Muffin bread or large slice of bread
  • Avocado
  • Smoked salmon
  • Fresh herbs
  • 100g butter
  • 2 egg yolks
  • 1 tbsp lemon juice
  • Salt and pepper
  • Fresh herbs of your choice

  1. Start by toasting your bread in the toaster
  2. Melt the butter in a saucepan. In a double boiler over medium heat, whisk the egg yolks with the lemon juice and 1 tbsp water. Whisk in the melted butter to emulsify the hollandaise sauce. Season with salt and pepper.
  3. Coat your bread with the sauce
  4. Peel and slice the avocado into thin strips. Arrange on the bread
  5. Add a slice of smoked salmon and your fried egg.
  6. Add a little hollandaise sauce if desired
  7. Sprinkle with a little Marcel Senchou organic sweet paprika and the herbs of your choice!
