INGREDIENTS

  1. Rinse and peel the tomatoes, cut them into quarters and remove the seeds. Crush the flesh.
  2. Clean the onions and slice finely.
  3. Brown the mince for 15 mins over a medium heat in 2 tbsp oil.
  4. Add the onions, pressed garlic, crushed tomatoes, cumin, coriander, salt and pepper.
  5. Finish cooking over a low heat for 5 mins.
  6. Peel and halve the avocados. Remove the stone and cut the flesh into small cubes. Sprinkle with lime juice.
  7. Finely crush one half with a fork, the fromage frais, salt and pepper and add the twist pack.
  8. Stuff the tacos with meat and top with guacamole garnished with sprigs of coriander. Serve with lime wedges.
