To use green cardamom, you will first need to remove the small black seeds from their green husky shells. You can use cardamom directly in cakes and pastries, it goes especially well with brownies and chocolate mousse. We also like to use it in its raw form to infuse the syrup of fruit salads or to add to the cooking water of rice.
